POUILLY-VINZELLES La Soufrandière Cuvée X-Taste 2000

Different, and original ! X-Taste is made from botrytised and dessicated grapes that were carefully left standing on the vine until the magical stage of « Extra-maturity » was reached. The grapes were picked on November 11, 2000, slowly pressed for 5 hours in an old vertical wooden press (Marmonnier press) to finally produce  an amazing « liqueur », full of aromas (quince, dry fig, dry fruit…). Such an elixir took a whole year to fulfil its fermentation in small 57 litre (15 US gallon) oak barrels, called quartauts ; it was bottled in half-bottles (37.5 cl) in April 2002.

  Technical notes:
 

Age of vines : from 23 to 70+ years

  Soil: clay and limestone, very high red iron oxide on Bajocian. On the highest and most stony part of « les Quarts »
  Altitude : 250 metres (820 ft)
  Vinification & Ageing : hand-picked dessicated grapes on November 11, 2000. 100% vinified and aged in quartauts for 18 months (small 57 litre (15 US gallon) oak barrels). 220g/l residual sugar.
